Dried tomatoes in extra virgin olive oil are a typically sicilian, typically summer recipe that allows us to enjoy the unique flavour of tomatoes even during the winter months. There isn’t a sicilian peasant family that doesn’t prepare dried tomatoes for the winter. A simple recipe that only needs the warmth of the sicilian sun. Once dried, seasoned and preserved in oil, they become an excellent ingredient for a variety of recipes, both simple and elaborate, giving our dishes a rich, delicately sweet flavour. Dried tomatoes in extra virgin olive oil are a real treat for the palate. They make an excellent starter, served with slices of homemade bread for example, but they can also be used to add flavour to a first course or vegetable salads, or to enrich bread dough.
